Client achieves 50% reduction in Food Waste

We are proud to announce that one of our London-based clients, a private equity firm, has successfully achieved a remarkable 50% reduction in food waste. This significant milestone was made possible through the integration of Winnow’s AI technology, which accurately tracks and monitors food waste.

Executive Chef, Danielle Gilis and her dedicated team have worked tirelessly, finding innovative ways to repurpose ingredients that would have otherwise gone to waste. From fruit peel tea and vegetable trimming kimchi to leftover herby pesto, they've created a variety of sustainable and delicious solutions.

In Danielle’s own words: “You need to stop and think about what's in front of you—how can you utilise the whole product? Look at it as a whole, not just the bit that you want. Winnow’s insights provide our teams with clear data - it gives you information to make the team more aware of what's going on... it's here in black and white on the screen. It has empowered us to monitor waste daily. What I find most useful is at the end of the week, I get the Winnow dashboard and see my weekly wastage. I can look at the ups and downs of what exactly is being thrown away." 

Monitoring waste on a daily basis means the team can quickly identify and address inefficiencies, resulting in faster implementation of waste-reduction strategies. Their impressive efforts have resulted in a remarkable 2-tonne reduction in food waste, which has, in turn, prevented 7.5 tonnes of CO2 emissions per year. This significant milestone is a major step forward in our journey towards net zero. Well done team!
