50ml peppermint tea infused

Whitley Neill Raspberry Gin

20ml Cointreau
-
20ml lime juice
-
10ml sugar syrup

25ml egg white (or water from a

can of chickpeas)

Garnish:

1 raspberry

1. Prepare your Peppermint Tea infused Raspberry Gin - 2g Rare Tea Peppermint Tea to 100ml gin and infuse for 2 hours and strain.

2. Chill a coupe with ice.

3. Add all ingredients into a shaker and shake dry (no ice) well for at least 20 seconds.

4. Add ice to shaker and shake again.

5. Discard ice in the glass and double strain into your coupe.

6. Garnish and serve.
